In our experience, the nutritional makeup of the grain offers something that few people have known or understood, until now. It lies in the grain itself, and the fact that pre-prohibition whiskey was different, better, because the starch content of grains like rye was so much lower, then.
Take the research of Todd Leopold, at Leopold Brothers in the YouTube clip. In the discovery and building of their pre-prohibition era 3 chamber still, Leopold discovered in historic documents that the starch content in rye long ago was 60%. Sadly (for whiskey), modern methods have lowered the quality in the chase for high yields, and has increased the flavorless starch content of rye to 80%. So Leopold searched and studied distilling, brewing, and malting, and discovered an artisan rye with lower (62%) starch, and the smooth mouth softeness of their whiskey returned.

During the brewing process, he called us to share the discovery..."It must be the high protein, it tastes like a freakin' smoothie". The Smoothie-Style line of fruited sours was born.
